The Bald Chef Cooks His Green Chili In DC 101 Cook Off
The Bald Chef Competed in the DC 101 Chili Cook off for the National Kidney Foundation for a few years running. Starting off with the free style red chili compaction know as Snatch chili. In 2012 was a cook for the compaction as a The International Chili Society (ICS) member. The chef cooked on site his Green Machine green chili. Chili Verde or Green chili is defined by the International Chili Society as any kind of meat or combination of meats, cooked with green chili peppers, various spices and other ingredients, with the exception of beans or pasta which are forbidden. ISC members must cook there chili at the event and have just a few hour s to cook there recipes. Then The chili is judged by members of the National Kidney Foundation. Each ICS contestant needs to cook a minimum of 2 quarts of chili prepared in one pot which will be given to the judges. Judges will vote for the chili, as defined by the International Chili Society, based on the following factors: good chili flavor, texture of the meat, consistency, blend of spices, aroma and color.
