- 1 cut up Red Spanish onion

Pre heat oven to 350 deg. Mix the 3 cut Yukon Gold Potatoes, Poblano Peppers cut up,1 cut up Red Spanish onion, 2 tablespoon crushed garlic, 1 Tablespoon cracked black pepper, and the 1 Tablespoon sea salt. Mix in 3 Tablespoons olive oil and place in a glass baking pan and cook for 45 minutes. Turn the oven to broil for the last 7 minutes and serve.
